Receiving & Storing Pizza Inventory: Guidelines & Instructions Jump to section
Prepared Product Jump to section
Pizza products arrive pre-boxed and sorted by variety. These boxes must be stored at a temperature between -18˚C (0.4˚F) and -20˚C (-4˚F). All frozen products should be kept in a stand-up, chest, or walk-in freezer.
Handling Tip: Always handle boxes with care—never turn them on their sides or flip them upside down to prevent damage.
Temperature Checks: Regular temperature monitoring should be conducted to prevent spoilage and maintain product integrity.
For efficient inventory management, calculate the number of pizza varieties needed for each of your machines and use designated blue bins for safe transport.
Pizzas should be:
Boxed while frozen
Delivered in a refrigerated van set to -8˚C (17.6˚F)
Placed directly into machines. The machine will lock out the product to thaw specific to the programmed time. Once the set thaw time is reached the product is available for purchase.

All pizzas delivered to PizzaForno locations are in a frozen state and remain available for 96 hours inside the machine. The best-before date is 6 days:
