In the PizzaForno system, every pizza's journey from frozen storage to customer is finely tuned for quality and safety. This section explores our efficient stocking process, emphasizing controlled thawing, temperature management, and compliance with food safety standards.
Product Handling and Loading Process Jump to section
PizzaForno licensees must have a compliant cold storage solution and a food-safe prep area to handle and box pizzas. The process involves:
Ordering Inventory: Jump to section
Licensees place orders for new product inventory through PizzaForno. Minimum order is 1 pallet (72 cases). Orders are shipped to the licensee’s cold storage location.
Storing Product: Jump to section
Pizzas must be stored in a freezer set between 0.4°F and -4°F (-18°C to -20°C).
Freezer types can include stand-up, chest, or walk-in units.
The storage location must accommodate at least 1 pallet of inventory.
A loading dock is required for delivery. If not available, additional delivery fees may apply.
Preparing & Boxing: Jump to section
Licensees must prepare pizzas in a clean, enclosed, and temperature-controlled area. The simple process involves removing pizzas from shipping cases, placing them into PizzaForno-branded boxes, and labeling each box with the expiration date and pizza variety.
Note: A food-safe license is required to perform this step.
Transporting to the Unit: Jump to section
Boxed pizzas should be transported in a temperature-controlled van set to 17.6°F (-8°C). Pizzas must be kept flat during transport to avoid shifting or damage to the crust and toppings. Throughout the entire trip, pizzas remain completely frozen until they are ready to be loaded into the machine.

Loading the Machine: Jump to section
Once at the machine, pizzas should be loaded while still frozen to ensure proper handling and shelf life. The machine automatically manages the thawing process and makes pizzas available for sale once ready. After thawing, each pizza remains fresh and available for up to 96 hours (4 days) inside the machine.

1. Frozen Delivery: Every pizza begins its journey with delivery to the PizzaForno machines in a frozen state to preserve the long-term freshness of the ingredients.
2. Controlled Thawing: As the pizzas are stocked in the machine, they undergo a controlled thawing process managed by the machine's control system.
3. Thawing Time Frame: The machine carefully adheres to a specific time frame for the thawing process. This ensures that the pizzas are thawed and ready for cooking.
4. Real-Time Interface Updates: Once the thawing process is complete and the pizzas are ready, the machine's user interface updates to reflect their availability.
